Spirits and liqueurs

The mulled wine is a typical product of the Marche. It is mainly produced in the hilly areas in the Province of Ascoli Piceno. Of peasant origin, the mulled wine was served at special occasions such as harvesting , the birth of a male child and, on that occasion, a barrel was put aside to be used on his wedding day; with mulled wine were also soaked the arms and legs of infants to strengthen them. It is obtained from a mixture of different qualities, first pressed in a mechanical press and then in the hydraulics. It is then cooked in copper cauldrons over a wood fire until it is reduced to no more than twenty percent of the initial amount.

Local wines

The most known and appreciated wine of the whole Province is the Rosso Piceno, a nectar that contains all the flavors of these beautiful places and whose vineyards are influenced by sea breezes while they are sheltered from the wind from the Sibillini mountains. Ruby red color and delicate flavor, it is offered with dishes of the Marche and national. Other wines of the area are the white Falerio, Pecorino and Passerina and the Rosso Piceno Superiore.

Meats and Meat

The most widely known and appreciated salami of the Province is the “Ciauscolo”, whose special feature is its soft spreadability which makes really unique this bagged and differentiates it from other sausages.

Oil and Fats

The Salamora from Ascoli is a condiment that is made in Autumn through the maceration in oil fennel, orange peel and a few cloves of garlic. After about a month all is filtered and the Salamora is poured into special glass containers and stored in a cool dry place until the following Fall, when it gets a medium golden color. The Salamora is used in the preparation of dishes such as roast rabbit.


In the whole Marche Region and in the Piceno area, the tastes of the kitchens of Romagna, Umbria, Lazio and Abruzzo Regions blend together to create a unique regional cooking. Local cuisine is based on ingredients that the area offers and on the geographical features of the Region: from the hinterland to the sea, the countryside, the Marche cooking is dominated by truffle, mushrooms and olives.
